Have you ever noticed that the bubbles in a glass of champagne, or sparkling wine, go straight up? Researchers in the US and France have been studying the distinctive vertical bubbles which give the go-to party tipple its distinctive taste. Flavour molecules allow bubbles to rise smoothly up to the top. Not all the bubbles in carbonated or fizzy drinks behave the same way. In beer, they go in all directions. Bubble mechanics may also help researchers to understand physics in the natural world, like how methane and carbon dioxide molecules behave in the oceans.
